We love this as a rich chocolatey clean espresso based drink

“Nuevo Bilbao” - Tolima

Coffees selected from 4 to 5 adjacent small farms, between
3 to 6 hectares. Because the farms produce smaller volumes, the growers cup and blend to promote the collective in-cup quality. This
assists the farms in selling at the higher micro-lot price. This
new endeavour has produced some very exciting coffees with
wonderful profiles.

Selected from three farms: Los Andes, La Betania, El Tesoro
- Region: Caicedonia, Tolima - Hectares: 3 to 6 hectares -
Altitude: from 1750 – 1850 m.a.s.l - Varieties: Caturra,
Typica, Colombia F8, Castilla – Double fermentation: 45
hours - Sun dried: +/- 20 days Marquesina - Factor: 88

Profile: Fragrance: Fruity, Floral, Cocobeans, Sweet Cream,
Marshmallow, Roasted Cane Sugar, Demerara Sugar,
Spices, Green pepper, Flavour: Fruity floral, Chocolate,
Residule flavour: Balanced, slightly Juicy. Acidity mild, bright,
Orange. Body: Creamy balanced.

Selected from smaller farms within the same location with
similar varieties and profiles.

Planadas: Tolima is one of the most isolated coffee
producing regions of Colombia located in the Central
Colombia Andes mountains of Tolima nestling between
the vast Parques Nacionales Natural Nevado and the
Parque Nacional Natural Cordillera De Los Pichachos
Andes Mountain ranges. With very limited access, other
than through the town of Coyaima, mainly dirt road with
conditions permitting, it is a 12-hour road trip from Ibague
the province capital

The area falls in the middle of the conflict zone for many
years controlled by the FARC; a forgotten region left to the
discretion of the people to basically fend for themselves,
having to comply with the rules or law's set by the FARC,
restricted to selling their crops to either the FNC or local
trilladora’s and receiving at best only commercial prices

At these altitude’s of 1600/2000 is where the real
high-quality Specialties are found; the terra enriched in
volcanic soils, numerous fresh mountains streams.

Profiles: The coffees are rich in flavour, notes of red fruits,
herbs, citric and lemon, deep in tense chocolate and
panela, full bodied, and wonderfully balanced, excellent
acidity, with an amazing after taste. Coffees are all grown the artisanal way, fully washed and fermented up to 36 hours, sun dried, only
selecting the finest of the beans when ripe all are hand-selected
